First Post - What is a Seasoned/"Purged" Lobster?
Buying fresh lobster straight from the fishermen for immediate consumption might sound like a good idea, however the truth it is not. Those lobsters will have off flavor and an unpleasant smell because of the bait they had just consumed. Lobsters need to kept in ocean water tanks for at least 48 hours in order for them to throw out the bait. This process is called "purging" by the locals in Nova Scotia, and is more commonly known as Seasoning the lobster. The seasoned lobsters handle shipping much better than the lobster that are straight off the fishermen's boats.
